Food Hygiene
Training in basic food hygiene must now be given to all food handlers in care homes. This includes all kitchen staff, care assistants who help to serve food at meal times and any other member of staff likely to come into contact with food in the home.
This areas covered include: food hygiene legislation; the causes and prevention of food poisoning; personal hygiene required by food handlers; the storage and temperature control of food; how to prepare and serve food; cleaning procedures; and handling of refuse.
It also examines the more specific requirements of the care home environment, emphasising that older people are vulnerable and therefore more susceptible to food poisoning and other food related health issues.
